Stainless steel cookware works best at lower temperatures. Do not use high heat. Use medium heat or lower. Use the stove burner that best fits your pan; they should be as close to the same size as possible. Keep in mind also that stainless steel likes to ‘hang on’ to the food until it’s at that perfect stage of doneness. This is especially true with meats, but can happen with eggs, too. Be patient and allow the food to cook until it unsticks itself. Use butter or oil and all will be well. Low and slow is the way to go! Happy cooking!

I prefer stainless over Teflon. The cooking surface must be clean. If you can see a “rainbow” film on a dry skillet, then it is not clean. Get a can of Bartender’s Friend at any grocery or Lowes’ or Home Depot. It’s with the polishing/ cleaning supplies. Give it a couple of shakes on a dampened pan and scrub with a nylon pad, sponge or paper towel. Rinse well to remove all the grit and wipe dry. The “rainbow” should be gone. Another hint to prevent sticking. Heat you skillet until a drop of water dances across the pan. Then add your oil. This should help with your omelets.
