Lavender essence is a concentrated form of the scent of lavender flowers. Just a few drops bring a floral tone to any dish. Essence from flowers is best in recipes that require dried lavender or added to desserts or meats. French cooking relies heavily on lavender in many recipes, and those are good places to start. Look for recipes that might be enhanced by adding lavender essence. These include many desserts, beverages and meats. If you want to make a chocolate recipe, you’ll need to use lavender oil, not essence. See the link in the Resources section for some lavender essence recipes. Examine your recipe for the cooking method. Determine if you will be applying high heat or not. Add 10 to 15 drops of cooking lavender essence for every 1 tsp. dried lavender flowers required for heated applications such as preserves, breads and meat dishes. Add 10 drops cold lavender essence instead of 1 tsp. dried lavender flowers to those recipes that require no cooking, such as cold drinks and ice
