How Do You Cook With A Granite Ware Roaster?
Granite Ware roasters are available in two different models. The rectangular roaster is sold without a lid and may or may not include a roasting rack. The oval roaster is sold with a high, domed lid, and the bottom of the roasting pan is embossed with a tree design that lifts the meat off of the bottom of the pan, allowing fats to drip away from the meat. Place the roasting rack in the Granite Ware roaster, if using the rectangular model. If you don’t have a roasting rack that will fit, cut an onion into 1-inch slices. Use the slices to elevate the meat off of the bottom of the pan. Place the meat in the roasting pan, centering it as much as possible in the pan. This will help keep the meat from sticking to the sides of the pan. Cover the pan with the domed lid or cover with aluminum foil to cook the meat faster. For foods such as roasts or turkey, cover the meat during the first two-thirds of the cooking time, and then uncover the meat to brown as the meat reaches the proper serving t
