Here’s my recipe for a really tasty Indian dhal (lentil soup) and raita (yoghurt and cucumber), which can be served with rice or flat bread. Cheap, easy, healthy and delicious. Heat 4 tablespoons vegetable oil until extremely hot. Add 1 tsp mustard seeds and 1 tsp cumin seeds. When they start to ‘pop’ add the chopped onion and fry for 5 mins on a lower heat. Add the chopped garlic, 3 tsp ground coriander, 2 tsp ground cumin, 2 tsp turmeric, 1 tsp chilli powder. After a minute add the tinned tomatoes and cook for 4 minutes. Wash lentils thoroughly in a sieve and add to the pan. Pour in 5 cups water and bring to the boil. Add 2 chicken stock cubes and 3 tsp salt. Cook for 40 minutes, stirring regularly towards the end to avoid sticking to the bottom. Taste and add more salt if required. Turn off heat and add chopped coriander leaves. For the raita, combine yoghurt, 2 tsp sugar, salt and pepper to taste. Add finely chopped cucumber and stir. Serve with Basmati rice or Indian flat bread, o
