Let the wings come to room temperature. Preheat your oven to about 450 degrees. Salt and pepper the wings or use lemon pepper instead. You will need a sheet pan with a metal grate, or broiler. Spray it down with Pam. Place the wings on the grate/grill, not touching, in one single layer. Put in the hot oven and roast for about 20 – 23 minutes. If you prefer you can turn the wings over after 15 min. but it isn’t necessary. I always set my timer for 22 minutes and when it goes off, I take the wings from the oven. (oven temperatures vary; so if your oven runs really hot, yours may be ready at 20 – 21 minutes. If not, they may need to roast a full 23 min. Remove from the oven and let rest a few minutes. Prepare a dip if you like while they cool a little. Serve. This is the easiest way to cook wings, the fat drains off as they cook and they are very, very tasty and flavorful this way. Very simple.
