How Do You Cook The Best Black Bean Soup?
My Dad came up with this great recipe several years ago for my birthday…I love it! This delicious recipe makes such a wonderful, hot meal for fall and winter time! Gather the ingredients for the best Black Bean Soup: * 2 c. chicken broth * 5 (15 oz.) cans black beans * 1 lg. onion * 3 stalks celery * 2 T. minced garlic * 1 vegetable bay leaf * 2 T Worcestershire sauce * 1 T. cider vinegar * 1 tsp. Garam Masala seasoning * 1 to 2 tsp. salt * For the Topping * 1/4 cup fresh minced cilantro * 1/4 cup fresh sliced green onion Sauté the onion and the celery in a skillet with about 3 tablespoons olive oil. Puree the black beans and put beans and chicken broth in a saucepan on medium heat. Add your bay leaf, the Worcestershire sauce, the cider vinegar, and then salt the mixture to taste. Lower the heat and add Garam Masala seasoning. Let this cook for about 20 minutes. Ladle into big bowls and liberally add topping….cilantro is my favorite topping of all!
