How Do You Cook Savory Sausage With Orzo?
This recipe pairs pre-cooked sausage with orzo, a grain that’s as versatile as rice, with a slightly different flavor. It’s nice to prepare as a change from the usual chicken or beef dishes.For a more lowfat dish, try using chicken, turkey or even vegetarian sausage. Brown sausage in olive oil in large heavy skillet over medium high heat for about 2 minutes, then add dried orzo. Cook and stir for one minute. Slowly add beef broth, 1/2 cup water, and Italian seasoning. Bring to a boil, reduce heat, and simmer for 5 minutes. Add zucchini, cover, and simmer for another 4-5 minutes, until orzo and zucchini are fork-tender. If using peas, stir in at this point. Remove lid, stir in green onions and red pepper and stir. Season to taste with salt and pepper. Transfer to serving dish and garnish with dried parsley, if desired.
