Quinoa is an ancient grain that is full of protein. For those on a gluten-free diet, quinoa is a great alternative grain which is filling and can be delicious when paired with the right ingredients. Prepare the quinoa grain by first rinsing the grain in a mesh strainer. Quinoa is cooked in much the same way as rice. Add 1 cup of quinoa to 2 cups of water and bring to a boil. Lower heat to simmer for 5 minutes then remove pan from heat and let sit until all the water is absorbed. Allow to cool. Then fluff with a fork. Chop each cherry tomato in half. Wash a handful of cilantro leaves. Drain. Then coarsely chop. Open can of black beans. Pour into strainer and drain all of the liquid that was in the can. Rinse thoroughly. Drain all water off. Once quinoa is cooled, pour into a big salad bowl. Then add the sliced cherry tomatoes, the chopped cilanto leaves and the drained black beans. Stir to combine.
