How Do You Cook Low Calorie Kale?
I absolutely love “greens” in the African American culture we refer to collards, turnips, and mustards as greens. We typically cook them with fat back or some other meat to season them. They are very high in Vitamin A and numerous vitamins and minerals. Use the kale as quickly as possible. It tends to wilt if not used quickly. Place the kale in the sink or dish pan filled with cold water. Wash each leaf several times. They may be dirty and grit changes the taste. Place the pot on the stove on medium heat. Pour two ounces of olive oil in the pot. Do not let the oil burn. You may sauté leeks or onions and remove them from the pot. Set them aside. Take the kale out of the third rinse of water you may dry on a paper towel to decrease the amount of water. Take several stalks and kale and roll them together in a tight roll. Cut them in one to one and half inch pieces. Place them in a colander. Rinse them again. Shake the water off. Slowly place the kale in the pot and return to the stove. Pl
