How Do You Cook Fried Rice From Leftover Food?
Fried rice is the easiest meal to make especially if you have some leftover food. You can make it as healthy as you want or as fattening as you want but I hope your choice is on the healthy side. Do not use Uncle Ben’s rice. Use any long grain rice such as jasmine rice. Cook the rice a day ahead and refrigerate. That will make the rice separates and easier to cook. Fried rice freezes well. So make lots of it and freeze for days that you don’t feel like cooking. Heat olive oil in a wok or pan on medium heat. Add in shallot/onion and fry for a minute. Then add in garlic. Don’t burn the garlic. Add in left over meat and stir for 2 minutes. Push the meat to the side and crack an egg in the middle of the pan. Wait a few seconds and then stir the egg to break it apart. Mix with the meat and shallot/onion. Cook for about 2 minutes. Add in rice. Stir well. Then add in the vegetables, salt and pepper to taste. Stir until everything is mix well and cook for about 3 minutes. Adjust taste. Add in
