Also add salt to taste. • Mix gently while adding 1 teaspoon of egg yellow coloring (liquid), or one tablespoon of egg yellow powder. • Add one large onion (sliced to preference), and 1 cinnamon stick while potatoes simmer in this mix. • As the water nearly dries up, add 2 tablespoons of any vegetable oil, or 2 tablespoons of margarine or butter, should no vegetable oil be available. • All of this has to be cooked on low heat, as the potato dish may burn. • Add 1 or 2 whole green chillies, if one requires the dish to be spicy. • Gently mix the potatoes and mustard seeds, allowing the margarine or vegetable oil to fuse into this mixture. Cook until potatoes are soft and ready to serve.
