Roast the chicken, or to cut time, buy a roasted (rotisserie) chicken at the grocery store. Place in a large pot with 2 quarts of water, chicken bouillon cubes, and shredded ginger root. Bring to a boil then cook on “simmer” about one hour. Allow to cool. Remove skin and bones. Do not remove the skin from the chicken before boiling. It is very important to the flavor of the stock. Break chicken into large chunks. Put chicken back into stock. Cook the rice noodles in a separate pot. Boil for about 6 minutes. Drain and rinse well. Drain again. Without this step, the starch in the noodles tends to thicken the soup too much. Add rice noodles to chicken and stock. Add soy sauce to tast
