Place cooker on high, then switch to low, just before you leave for work. When you get home, remove lid of slow cooker. Return heat to high. Allow steam to evaporate. If sauce sticks on the sides of the pot, periodically scrape it down. The sugar in the onions will carmelize and add to the flavor of your ropa vieja. Add salt, if needed. Serve on steamed rice or on tortillas.
