How Do You Cook Cuban Ropa Vieja While You Are At Work?
Ropa vieja is a traditional Cuban version of meat, stewed with tomatoes, peppers, and onions. It is very delicious. Although typically served on steamed rice, ropa vieja may also be served on steamed or toasted tortillas, with or without cheese, guacamole, and sour cream. Heat olive oil in large skillet. Add meat and brown on all sides. A great and extra tasty alternative to skillet-searing is to brown meat on a barbecue grill. Transfer meat to a large slow cooker. Add all other ingredients. Place cooker on high, then switch to low, just before you leave for work. When you get home, remove lid of slow cooker. Return heat to high. Allow steam to evaporate. If sauce sticks on the sides of the pot, periodically scrape it down. The sugar in the onions will carmelize and add to the flavor of your ropa vieja. Add salt, if needed. Serve on steamed rice or on tortillas.
