We eat lots of Cajun dishes, and make up many of our own, sometimes when we realize we do not have what we need to make a recipe we have already started. We never get flustered, and never go to the store for products at the last minute. We just make something that works. Put the frozen chicken in a casserole dish and brown it on the top of the stove. Once the chicken is thawed, cut the pieces into about one-inch square size and salt and pepper the pieces. Use Cajun seasoning if you like. You can make this a Cajun dish or not–just with the seasoning. Chop the vegetables for the microwave.
