Rinse the brisket under cold water. Set the brisket in a cooking bag with the fat side up. Twist the end of the bag before placing a twist tie around it. Place the cooking bag in a baking pan and poke several holes in the top of the bag to let out steam. Set the baking pan in the convection oven and cook for three hours. When the brisket is finished, wait 15 minutes before carving it so the juices can settle.
