Cooking black beans may take a bit of time but it is easy to do. In most southwestern kitchens frijoles usually means pinto beans but black beans are gaining in popularity. • Sort beans and remove stones, damaged beans and any other unwanted foreign materials. • Add beans to a large saucepan or Dutch oven about 4 quarts in size. • Add about a quart of cold water to beans in pot. • Bring water and beans to a boil and boil for 2 minutes. Reduce heat to low, cover with a lid, and simmer until tender. Depending on age of beans and altitude this should take between 1 to 2 hours.
