Chicken adobo is a delicious popular dish in the Philippines. This recipe is the original version. Wash and rinse chicken pieces with water and pat dry with paper towel. Seasoned the chicken with salt and pepper. Meanwhile, prepare the rest of the ingredients. Put the chicken pieces in a big pot then dump the rest of the ingredients on top of the chicken. DO NOT STIR THE POT. This is an important element in the cooking process. Let the chicken come to a boil. Once it boils, stir sauce to coat the chicken pieces. Adjust to low heat and let it simmer. Cover the pot and let it cook for 1 hour or until the chicken pieces are tender. You can choose to fry the chicken pieces then put it back to the sauce or totally skip the frying part. Either way you will have a delicious dish. Adobo tastes better the next day and is usually served with steamed rice. Enjoy!
