Jamaica’s national breakfast, so you know it has to be good. There are many ways to spice it up and change things around, but here’s the basic gist guaranteed to please everyone! The salted cod (saltfish) usually is packaged in a container that keeps the salting of the meat intake. That being said, it will be extremely salty right out of the ‘box’. Soak the saltfish in a pot of water overnight to remove the right amount of salt. Remove from fridge and season with a couple dashes of ground black pepper. Heat enough oil to just coat the bottom of the skillet on medium. Add the saltfish and cook for about 3-5 minutes, then add the tomatoes and onions and cook for about 2-4 minutes more. Add the ackee and stir to mix through. At this point, the scotch bonnet may also be added for a spice (if desired). Turn heat down to low and allow to simmer for about 6-9 minutes. Enjoy!!!
