When you’re ready to prepare it, remove it from the package and rinse it well with cold water, then dab it dry with a paper towel. Be sure to remove giblets, if there are any. Chop the onion and place it into the chicken’s cavity. This adds some extra flavor while the chicken cooks. Rub butter onto the dry skin of the chicken.
