Lay a sheet of heavy duty foil into a shallow roasting pan. Make sure the sheet of aluminum foil is large enough to wrap around your roast completely. Lay the roast in the center of the foil sheet. Sprinkle the entire roast with onion soup mix. Add 1 cup of water and a can of mushrooms, if desired. Fresh, sliced mushrooms can be used if they are available. Wrap the aluminum foil tightly around the roast, making sure to seal any open edges by folding the foil over securely. Bake in a preheated 350-degree oven for 2 1/2 to 3 1/2 hours until the desired doneness is achieved. A meat thermometer reading 140 degrees is equivalent to medium rare meat and 170 degrees is well done.
