These recipes can still be used when employing a convection oven, but a few adjustments need to be made to to prevent burning or drying out the food. Preheat the convection oven to 25 degrees Fahrenheit lower than stated in the recipe. Prepare food according to recipe instructions. Place food on pan or baking sheet in the center rack of the oven. Use roasting pans and baking sheets that have low sides to promote quicker, more even cooking. Set timer for 25 percent less time than the recipe calls for. Check food frequently to see if it has finished cooking. Food can easily become burnt or dried out if left in the oven too long.
