Organic dried beans are dried beans that grow without pesticides. When you purchase dried beans, it is necessary to sort through and clean the dried beans prior to cooking them. This is because the mechanical process that packages the beans does not remove foreign debris and materials from the beans. You might find rocks and dirt mixed in with the beans, as well as some beans that are inferior that you should discard. Spread the organic dried beans onto the baking sheet in a single layer. Examine the beans closely under direct light and remove any rocks, stones or other debris that you find mixed in with the beans. Look for inferior beans as you are sorting through the beans. If you find shriveled or misshapen beans, remove these and discard them. If you find beans with holes in them, remove these and discard them. Place the sorted beans into the colander. Rinse the beans under cool water and place them into the stockpot. Fill the stockpot with room-temperature water so the water level
