Make sure that your baked pieces are fitting together properly. If your pieces will not fit, then your structure will not stay together no matter what you do. Be ready to trim or re-bake as needed. Set up your structure backings. At first you will need to use heavy items like cans or boxes to shore up the pieces while the icing dries. Get your icing into a piping bag so that you can get down to work. Make sure that you use a medium sized tip on the bag. Too thin of one will create the issues with stability. Too thick of a stream will make for run off. Put in the heavy structure supports. Be careful not to get them into the icing, or when it sets you will have to yank it out of the icing.
