Add a tablespoon of salt. This helps detach the membrane from the egg. I have found it doesn’t matter if the eggs are newly bought or have been in your refrigerator for a while. 2- Bring the eggs to a boil. Boil for 1 minute. Do not overboil. 3- Remove the pan from the burner and cover the pan with a lid. 4- Let the eggs sit in the hot water for 10-15 minutes for large eggs. For medium eggs, 8-12 minutes is sufficient. 5- Drain the hot water and immediately run cold water over the eggs. 6- Crack the egg. Peel. Refrigerate until needed.
