Start with a pot of cold water with enough water to cover all the eggs. Place the eggs in the water while it’s cold and put on the burner. Bring the water with the eggs to a boil and immediately lower the temperature to “simmer”. Cover the pot with a lid and keep covered and keep the temperature at “simmer” till finished. THIS PART IS IMPORTANT…cook for 12 minutes exactly!! Prepare an ice water bath for the eggs to stop the cooking when they are done. Fill any size bowl big enough to cover the eggs with water and ice cubes. This will stop the eggs from getting that awful dark grey ring around the yolk which indicates that they have been over cooked. At exactly 12 minutes, remove from the heat and place the eggs in the ice water.
