This Zucchini Bread Recipe is special. Many people are excluding Wheat and Gluten from their diets because of health reasons or simply because they prefer to be more health conscious about the ingredients in their foods. Preheat oven to 350 degrees. Grease and flour a 9×5 inch loaf pan. In a large mixing bowl, combine baking mix, sugar, Cinnamon, salt, and Nutmeg. Mix these dry ingredients with a wooden spoon or whisk. In separate bowl, combine shortening, zucchini, eggs, and lemon zest. Mix wet ingredients into dry ingredients with electric mixer. Add chopped walnuts (if desired). Slowly pour batter into greased and floured, 9×5 inch loaf pan. Place loaf pan into preheated oven. Bake batter in loaf pan 55-60 minutes or until golden brown or when toothpick inserted in the center comes out clean. Note: Ovens may vary, therefore, it may take up to one and a half hours baking time in some ovens for this recipe.
