Allow the cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely. Topper! If yo want to make the glaze, stir together the remaining lime juice and sugar. Brush onto cooled cookies. Take your time. A fresh, glazed spring cookie needs to exudes a ‘pastry like appearance’.
