How Do You Bake Gluten Free Peanut Butter Cookies?
Gluten free does not have to mean grainy, strange textured cookies! In fact, these cookies were rated better than cookies that used regular flour! Preheat your oven to 350 degrees. In a bowl mix together the gluten free flour mix, (I like to use the all purpose blend from 365 or even better, I like to make my own using Analise Roberts’ recipe which is * 2 cups brown-rice flour (extra finely ground) * 2/3 cup potato starch * 1/3 cup tapioca flour either one works great) baking soda and xanthan gum. Set aside. Using a mixer mix the peanut butter, Crisco and sugars together until they become fluffy. Beat in the eggs and vanilla until the mixture is smooth. Add the flour mixture with the mixer on low. Beat until it is fully combined. Stir in the chocolate chips. Drop dough by the tablespoon on parchment paper lined cookie sheets. Bake for about 11 minutes or until edges are golden brown. Let the cookies cool for about 15 minutes before enjoying!
