How Do You Bake A Rhubarb Cake?
• Preheat oven according to directions on the cake mix box. • Prepare the rhubarb. Wash the rhubarb and cut off any end pieces that are discolored; usually about 2 inches off each end. • Cut the rhubarb into 1 inch cubes. • Place the cubes of rhubarb into medium saucepan. • Cover with water going over rhubarb about 1/4 inch. • Add sugar (1 cup). • Turn stove onto medium high and cook rhubarb until tender. This will take about 7-10 minutes. • Remove from heat. • Make the cake. While the rhubarb is cooking, prepare the cake mix according to the directions on the mixture box. Pour the mixed cake into your cake pan. Do not bake it yet. • Take the pan of hot, cooked and softened rhubarb and pour it slowly and evenly over the top of the unbaked cake mixture. Bake the cake in the oven according to the instructions given with the cake mix.
