There are many meatloaf recipes out there. This one is a bit different; with a cream cheese spinach sauce. In a large bowl, combine and mix well egg, beef, onion, milk, Worcestershire sauce, salt, pepper and bread crumbs. If using fresh mushroom, saute in a skillet with butter until browned. Preheat oven at 400 degrees F. Roll out the mixture onto a wax paper, into an 8″ x 5″ rectangle, half-inch thick. Now lay the mushroom and sprinkle cheese on top of beef mixture. Then roll it lengthwise. Put the seam “side down” in greased large baking dish. Bake in the oven for about 45 minutes. Make the cream cheese spinach sauce in the last minutes of baking the meatloaf. In a skillet over medium heat, cook the spinach and cream cheese until fully melted. Set aside. Mix the brown sugar and ketchup in a small bowl. Take the meatloaf out from the oven, and spread over loaf immediately with the brown sugar and ketchup mix. Slice meatloaf on to individual serving plates. Sprinkle with reserved Monte
