If you are like me, you love chocolate cake. However, in this day and age when we are all becoming more and more conscience of our weight and our calorie intake, every bite today has to be worth the extra minutes we’ll spend on the treadmill tomorrow. As addicting as it is, this cake is worth it. Preheat oven to 350 degrees. Whisk (or sift) together all DRY ingredients until a smooth, light brown color is consistent throughout the mixture. Add milk, oil, eggs and vanilla. Beat well until all lumps are removed. Add hot coffee and beat again. At this time, the batter will be very thin. Lightly coat the baking pan with the non-stick cooking spray. Pour the batter into the pan and place into the 350 degree oven. Bake for 35 to 40 minutes or until done. (A toothpick will pull out dry when inserted into the center of the batter indicating the cake is done.) Allow the cake to cool and apply your favorite iced topping.
