This recipe was given to me by a friend and its super easy and delicious. It makes great cupcakes too. Make cake mix according to directions on box EXCEPT omit 1/4 cup of water and add 1/4 cup of the creme de menthe. Bake the cake as directed on the box. Once cake is cool, frost with your choice of chocolate frosting. Mix 2 tablespoons (or more) of Creme de Menthe with the Cool Whip and put on top of the chocolate frosting. Voila! A chocolate mint cake!
