How Do You Bake A Lemony 7-UP Cake?
Lemon juice plus 7-Up (or Sprite) soda in a cake. This fancy one will make your kids happy. Melt the butter or margarine in the microwave oven on high-power. In a large bowl, gradually whisk well brown sugar into the melted butter (margarine), about 15-20 minutes. Be sure there are no lumps. Add eggs slowly one at a time and whisk well into the sugar-butter mixture. Make sure there are no lumps. Then slowly add in the flour and lemon extract. Mix thoroughly. Pour the soda into the batter made in the prior step, stirring well to evenly distribute the soda into the contents. Preheat oven to 325 degrees F. Pour the batter mixture into a large baking pan. Place pan into the oven and bake for about 55-70 minutes, or until a toothpick inserted comes out clean. Remove the cake from rack and cool at room temperature. Drizzle lemon juice and dust the confectioners’ sugar on top of cake before serving. Makes a hot breakfast item.
