Here’s a great way to use your surplus blueberries – – bake a blueberry cream cheese loaf cake. Bake more loaves if you have extra blueberries. Recipe for 1 loaf pound cake. Thaw frozen blueberries if using. Rinse fresh blueberries and let dry. Whisk together the baking powder, flour and salt a mixer bowl. Using mixer on high speed and beat in the butter, cream cheese until small peaks formed. Stir in sugar, beat until fluffy. Scrape the sides of the bowl. Add and beat eggs one at a time.
