Depending on how much chicken you have….then Boil the chicken (2-4 pieces) in in a soup pot with about a quart and 1/2 to 2 quarts of water, (it needs to cover the chicken by about 2 inches minimum) adding in chopped onions, celery, and carrots. (You may add different veggies, but the basic flavor and basic stew contains onion,celery and carrots )We like lots of veggies, so I use about 1 cup of each for that amount of water. Season with Salt and Pepper. If you like potatoes in your stew then chop and add one or two. Cook up until the veggies are soft, then remove the chicken to a plate to cool. Chop when cool and return to the pot. Often I will add a can of chicken stock to pump up the stock, or I use the dried chicken bouillon version very successfully. If you use the bouillon then omit the salt, and or taste it before you add the salt. Add in a pinch of nutmeg, just enough to barely barely taste. Too much and you ruin the stock.
