How do u make a cheese cake with soft cheese and Mascarpone and not baked?
Take two cups of mascarpone cheese, two cups of whipping cream and 2/3 cup of lemon curd (I suppose you could also use your favorite fruit jam or jelly instead, if you like). If you have it, add in about a teaspoon and a half of grated lemon rind. Beat it with a mixer until fluffy, pour into a baked pie shell, arrange some raspberries and/or blackberries and/or blueberries on top, refrigerate for a couple of hours, and enjoy. This will have a lighter texture than a true cheesecake. To make it more cheese-cakey, you could dissolve an envelope of gelatin in a 1/4 cup of water and add that to the mix before beating.
