By quarters, I assume that it is a thigh with the leg connected. Pour oil into a saute pan and heat. Add the chicken directly to the hot oil and brown/sear all sides. When brown pull off flame and into a oven-proof pan and let bake at 325F for approx 45 minutes, or until done.
