How do to make fried rice?
There is no single ‘right’ recipe for fried rice. You start with using pre-cooked rice, (good way to use up leftover rice) and fry it in your pan, (wok or cast iron tends to get the best results, non-stick pan not so great) with onions, garlic, soy sauce, whatever veg you have on hand, good way to use up veg in the fridge, although it still has to be quality veg, like not gone bad, just maybe your carrots are not same day fresh anymore. Then chop up your veg all uniform and quite small (small dice) and fry up all of this in oil. You can use soy or oyster sauce of fish sauce or thai or asian chili sauces, depending on what heat or flavour you like. Like I said, no set recipe, just work with what you have that seems appropriate for your meal. You want a higher heat, also, in the pan, so the rice goes a bit crunchy, as opposed to a real low heat that would cause it to be soft and heated through.
