One of the jobs I used to have was in a donut bakery (fryery?). Donuts are made primarily one way, fried. There are two basic types of donut batter, yeast and cake. Yeast or risen donuts require time in a proofer to allow the yeast to activate. This dough is then rolled, cut, and shaped for whichever type of doughnut being made. Cake donuts are just what they sound like. The batter is much like cake batter but a little stiffer. It is usually made in large patches, scraped into an extruder (6, 9, 12, or 24 wide) which pushes measured amounts onto a conveyor that runs trough a long fryer filled with hot oil or shortening. Doughnut holes, are usually the byproduct of cutting yeast doughnuts, but can be made from a donut hole extruder much like cake donuts. That help?
