How do Texas wines stack up against California or European varieties?
A lot of people might turn their nose up when you mention Texas wines, but when you ask them what type of wines they like and then offer them the Texas variety, it really knocks their socks off. They can’t believe it comes from Texas. What inspired you to pursue cooking as a career? At the end of the 1980s, I was reading Texas Highways magazine and there was a feature on Dean Fearing and Stephen Pyles out of Dallas. They are considered the forefathers of Southwestern cuisine. I looked at the pictures in the magazine and I had never seen food that could be that creative and look so good. That made me decide to go to culinary school. I always had a passion for cooking, but I didn’t know you could make a career out of it and be respected for it.
