You add the hollandaise sauce when serving the salmon. So after you have cooked the salmon, and it is fully cooked.

Just put the sauce on top to serve when the salmon is done cooking & plated. Hollandaise is very “sensitive” and can separate if it is cooked too long.

Actually Bearnaise [ basically Hollandaise + fresh tarragon ] is a much better sauce for salmon and I’m one of those guys who firmly believes that placing the sauce under the product results in an infinetly better presentation than saucing over ever will.

hollandaise is a “finishing sauce” you put this on top at the very end. To make an excellent hollandaise, i use fresh lemon zest in mine! This meal would also be great with grilled asparagus!
