Unfortunately, there is not much you can do. When you sell things on Ebay, you should ALWAYS send things with delivery confirmation of some sort. Otherwise, you can find yourself getting the short end of the stick. It is also important to get insurance on items, or at least make it VERY clear in your ad that you are not responsible for lost/damaged items in the event the buyer does not opt for insurance. If you have your receipt, it should at least show the price and the zip code where your item was sent. Your best bet is to use that information in your response along with the date and time it was sent. Explain that you did not purchase delivery confirmation and therefore was not provided with a tracking number. Sadly, I don’t think you will win this one. Sorry I was not more help.
