How do I persuade my catering manager that Fairtrade products can be economically viable?
The following are examples of how certain colleges incorporate FT products into their buttery/cafes/buttery: quote them to convince your catering manager selling FT does work. Note that the higher cost does have to be offset by other means as you will see below, but Cambridge shouldn’t be short of a bit of business ingenuity! • King’s College • Coffee shop: Running since 2001s; 40% of the café’s sales are FT; they try to do organic breakfasts with soy milk and organic flakes etc; a lot of FT products sold in the café such as chocolate and geobars are sold at a very low profit margin but this is compensated for by raising the price for coffee • General catering: FT coffee and sachets of FT sugar supplied at all formals/conferences, some FT tea available in the buttery • Bar: King’s doesn’t sell FT wine as yet (Feb 2006) as wholesale price is 4.50–5.50 • Emma College A Fairtrade formal is organised once every term at which organic meat and fruits like avocado are used.
