How do i make spaghetti and Meatballs without onions?
They aren’t a must, just leave them out. But first let me tell you that I hate onions too. Nothing worse than chomping down on a poorly cooked onion, yuck! But on the other hand they add much needed moisture, and flavor so I came up with a solution for this that pleases even the most staunch onion hater. I use a cheese grater and run my onion over it. It makes a pulp that disappears into any recipe. I use it for potato salad, meat loafs and meatballs. You don’t even know it’s there.
I don’t use onions for most types of pasta – though I love onions myself. For the meatballs use mince, some bread soaked in milk, a little bit of crushed garlic, salt, a lot of greated parmesan. I put some herbs in, usually rosemary or sage. I don’t use eggs, but some people do – I don’t think you really need them. Make small meatballs using a teaspoon and your hands, and fry them – you can roll them in breadcrumbs first, but it’s not absolutely necessary – i don’t if I’m in a hurry, and I am most of the time! Now you can make some red sauce if you like – oil, garlic, chilli pepper, tomatoes. When it’s almost ready, add the meatballs in the sauce and let them simmer for a while, without stirring if possible – you don’t want to break the meatballs. My daughter doesn’t like tomato sauce, so I use just butter or olive oil, in which I have quickly fried a little garlic, sometimes with some chilli peppers too, and I add the meatballs at the end.
tomato sauce and paste, garlic or garlic salt, oregano or italian seasoning to taste, some people like to add a little sugar, maybe some basil- the longer you let simmer the more flavorful meatballs, i make like a meatloaf- i mix hamburger w/a couple eggs, crushed saltine crackers or breadcrumbs and i sprinkle in garlic salt and italian seasoning, then form and cook in skillet w/a little oil.
