How do I make real satay sauce?
Satay sauce is enormously popular in Australia, yet it has never really hit the big time here, hence the lack of decent ready made brands in the shops. I am unable to give actual recipes in this section but you will find that it is not difficult to make at home. You will need to soak a couple of tablespoons of tamarind pulp in 3 or 4 tablespoons of water, then squeeze it through a sieve and reserve the water. Crush a few handfuls of shelled, raw or dry roast peanuts in a food processor. Heat a little peanut oil in a frying pan and add some chopped garlic, at least 4 cloves and fry it till golden then stir in a few finely-chopped red chillies, the peanuts and at least 100g of palm sugar. (Palm sugar is available from Asian grocers and some of the major supermarkets.) Stir in the tamarind and soaking water and a cup of thick coconut milk.
