How Do I Make My Recipe For Cucumber Tomato Salad?
This recipe is easy to make. I like to serve it with my black bean quesadillas. It is a light salad that doesn’t have lettuce. Cut the ends off of the cucumber and peel it. Cut the cucumber into medium/ small cubes. Put your cut up cucumber into a medium size bowl. Cut your tomatoes into cubes. Place your cut up tomato into the bowl with the cucumber. Open your can of chick peas or garbanzo beans, same thing. Strain the liquid into the sink. Rinse the chick peas under cold water a couple times. Put the chick peas in the bowl with the cucumber and tomato. Add the lemon juice, red wine vinegar and olive oil to taste. Put a pinch of sea salt and fresh ground pepper Mix everything together with a wooden spoon until well coated. Taste it to see if it is to your liking. Serve as is. If you have leftovers cover the bowl with plastic wrap and store in the fridge. I would drain some of the olive oil/ vinegar/ lemon juice sauce into a separate container so that the salad doesn’t get too bitter w
