The coconut must be dried. To do this, remove the husk, then remove the shell and break the coconut meat into one inch square pieces. Lay out in the sun for about three weeks. This dried coconut is called copra and is traded throughout the tropics. One the copra is dried you must press the oil from the copra. I think you can do this with a simple press made from a hydraulic jack and some perforated metal. This will be raw coconut oil and must be filtered to be good for cooking. Extra Virgin oil is the first pressing, Virgin Oil is the second pressing. So your coconut oil would be Extra Virgin but probably not as good as you can get in any market in the Philippines or Thailand. But you will have the fun of making it.
