Once Outlook is open, open the address book by hitting the following key combination (ctrl+shift+b) or by going to the Tools Menu, then selecting the Address Book. Once the Address Book is open, click on the Tools Menu and select Options, in there you can set which address book\contacts you would like mail to look at first upon sending messages.
