How do I learn to sew/create mens clothing?
Other than swapping right for left on shirts and jacket closures, and putting fly shields in pants, sewing for men is a lot like sewing for women. The main problem is that men’s patterns are pretty scarce, and good men’s patterns are even scarcer. Best commercial patterns I know of are from Kwiksew (http://www.kwiksew.com), Jalie (http://www.jalie.com), and Vogue (http://www.voguepatterns.com) with a smattering more of specialty outdoor patterns or historic re-enactment patterns. I’d suggest you might start with something like KwikSew 2777, which is a very good shirt pattern. When you learn to sew a really high quality shirt, you’re developing most of the skills you need for other types of sewing.
