Well, what do you know already that your skin is sensitive to? If you get sunburn easily, getting your ears pierced won’t be a problem. However, if you’ve ever had a reaction to some kind of metal this might affect what earrings you have to wear, as well as how easily your ears could get infected. Ask your mum what earrings she was wearing when she got an infection. If you ask me, I think it would be fine to get your ears pierced if you have sensitive skin, as long as you have the appropriate earrings to wear. I have semi-sensitive skin, and I can’t wear super cheap earrings. Try to get/wear earrings that are for sensitive ears, or gold earrings/posts, especially when you’re still healing. I don’t know about a way to check if it’s okay, but I say if it’s something you want, go for it. I’d say get your ears pierced with a needle if possible and keep them as clean as you can. In the case that your ears do get infected, DON’T take the earrings out. This will close up the infection inside
